  • 1 egg

  • 1/4 tsp baking soda

  • 1/2 tsp vanilla extract

  • 1 tbsp avocado oil (or coconut oil)

  • 1 tbsp honey (optional, or sub maple syrup)

  • ½ tsp cinnamon

How To Make Them

1. Preheat & Prep

Preheat your oven to 350°F. Grease a mini muffin pan or line with parchment cups.

2. Mix Wet Ingredients

In a bowl, mash banana, then whisk in egg, vanilla, avocado oil, and honey until smooth.

3. Add Dry Ingredients

Stir in quinoa flour, baking soda, cinnamon and salt. Mix until just combined. Batter will be thick and a bit sticky.

4. Scoop & Bake

Spoon batter into prepared muffin cups, filling each about 3/4 full. Bake for 15–18 minutes, or until the tops are golden and a toothpick comes out clean.

5. Cool & Enjoy

Let cool slightly before removing from the pan. Store in an airtight container for up to 5 days—or freeze for later!
